Waffles. I've finally got them down pat. For a while there they were tasting like bland cardboard and I was ready to give up on them. Then they where too eggy. I don't like eggs. Really, not at all! I can eat them, and I do every once in a while, but I really don't like them. And then miracle of miracles, I read somewhere to add sugar and vanilla to the boxed mix and Voila! Perfection! Yes I know you can easily make waffles from scratch - but I can't be bothered. It's easier to just doctor the boxed mix. Seriously! Especially when I am only half awake to begin with. :)
Here's the secret...
Add a teaspoon full of sugar to the boxed mix for each 1 cup of mix and 1/4 tsp vanilla per 2 cups of mix. Cook for 4 minutes on the George Foreman. Top w/ powdered sugar, strawberries and whipped cream, and a few choc chips. Although I seriously doubt I should call them breakfast. They taste more like dessert. YUMMY!

I made the rainbow cupcakes yesterday and they were a hit! I took them to Cub Scouts last night and the kids loved them and the moms want to hire me out.
Kelly so glad that the cupcakes were a hit with the Cub Scouts. What have you been up to lately?! Getting any scrapping done? I can't wait until school is out. We are ready for a break!
